Bahn Mi Mason Jar Salad

Serves 4 | Prep Time: 30 Minutes | Cook Time: 10 Minutes

For the Sriracha Dressing:
3/4 cup plain Greek yogurt
1-2 tablespoons sriracha
1 tablespoon rice vinegar
1 tablespoon granulated honey

Bahn Mi Pickled Veggies Recipe:

1/2 cup. cucumber, julienned
1 cup daikon or radishes, peeled and julienned
1 cup carrots shredded
2 tsps kosher or sea salt
1 cup unseasoned rice vinegar
1 cup honey
1 cup water

Make sure the vegetables are fairly dry (pat them dry) so they don’t dilute the pickling liquid with excess water. Combine the vinegar, salt, honey, and water together until dissolved. Place the vegetables in a jar large enough to fit them all and pour the pickling liquid into the jar so that all of the vegetables are submerged. Store them sealed in the jar in the refrigerator for 5 days for best flavor. (I was too impatient and cracked them open after an hour – they were great!)

Salad Ingredients:
Lemongrass Chicken
4 cups red cabbage, chopped
1 1/2 cups Pickled veggie mixture,
1 cups cucumbers, chopped
1 cup shredded carrots
1 jalapeños – optional, sliced on top
4 tsp cilantro, chopped

Directions:

  1. Prepare and cook chicken and allow to cool.
  2. Mix together dressing ingredients and divide among 4 mason jars.
  3. Layer dressing, Chicken- chopped, red cabbage, Pickled veggie mixture, cucumber, carrots, cilantro, and jalapeño.
