Balsamic Brussels

Serves 4, 1 cup each

Ingredients:

2 lb. brussels sprouts, halved
1 red onion, sliced
2 Tbsp olive oil
1 tsp. sea salt
½ tsp. black pepper
½ tsp. mustard seeds
2 Tbsp apple cider vinegar
1 Tbsp honey
2 tsp. Dijon mustard

Directions:

  1. Preheat oven to 425 degrees F and line a baking sheet with foil.
  2. In a large bowl, toss together all ingredients. Transfer to prepared baking sheet and spread out evenly.
  3. Roast veggies for 20 to 25 minutes, stirring only once in between, until sprouts are tender or until desired doneness.
  4. Serve and enjoy!
