Broccoli Chicken and Blueberry Salad with Poppy Seed Dressing

Broccoli Salad

Serves 4

INGREDIENTS
1 ½ pounds fresh broccoli, cut into bite-size pieces
1 cup fresh blueberries
¼ cup finely chopped red onion
½ cup dried cranberries
¼ cup sunflower seeds
1 large apple, chopped into bite-size pieces
1 tablespoon lemon juice
* 4 Cups Cooked Chicken, shredded or cubed (optional)
* 4 slices cooked bacon, torn into small pieces (optional)

For the creamy yogurt poppy seed dressing:
1 cup Greek yogurt
¼ cup honey
1 tablespoon lemon juice
2 teaspoons apple cider vinegar
1 tablespoon water
1 tablespoon poppy seeds

DIRECTIONS:

  1. In a small bowl, whisk together all dressing ingredients and divide evenly among 4 mason jars.
  2. Layer broccoli, chicken & bacon (optional), red onion, apple.
  3. Top apple with 1/4-1/2 tsp lemon juice.
  4. Add blueberries, cranberries, and sunflower seeds.
  5. Salad may be served immediately or refrigerated until serving. It will last for 2-3 days in the refrigerator.
  6. Can also mix all ingredients, except apples. Pour 1 Tbsp lemon juice over apples and then add to other ingredients. Top with dressing and mix well. Serve as side or as main dish.
