Caprese Pesto Chicken Mason Jar Salad

Caprese Pesto Chicken Mason Jar Salad

Balsamic Dressing:
1 clove garlic, minced
1 tsp dried basil
1 Tbsp Dijon Mustard
1 Tbsp Lemon juice
1/4 cup balsamic vinegar
1/3 cup olive oil
salt and pepper to taste
Mix all ingredients and set aside.

Pesto Chicken:
4 chicken breasts, thin cut
2 Tbsp Italian Seasoning
1 tsp salt
1/2 tsp pepper
Juice of 1 lemon
1 tsp lemon zest
1 tsp olive oil
* Season Chicken with Italian seasoning, salt, pepper, and lemon zest on both sides of chicken. Place in ziplock bag and dd juice of 1 lemon and 1 tsp olive oil. Let marinate 4-6 hrs. Preheat oven to 400 and bake chicken for 15-20 min or until done and no longer pink.

Salad:
2 cups cucumber, chopped
2 1/2 cups tomato, chopped
1/2 cup mozzarella balls
4 cups arugula or spinach
2 tsp fresh basil, sliced

Divide dressing evenly among 4 large mason jars, layer chicken- chopped, cucumber, tomato, mozzarella balls, arugula or spinach, and basil.
