Egg Veggie Quinoa Breakfast Mason Jar

Egg Veggie Quinoa Breakfast Mason Jar

1 Red, 1 Yellow, 1/2 Blue, 1 Green
Serves 4

Ingredients:

12 Eggs
1 cup Canadian bacon or bacon
1 cup quinoa, cooked
4 cups or 1 package Kale or broccoli slaw mix
1 tsp olive oil
1 tsp salt
2 avocados

Directions:

  1. Scramble eggs (or can also poach or fry) 2 eggs per serving.
  2. Cook or heat Canadian bacon or bacon
  3. Sauté kale or broccoli slaw mix in olive oil over medium high heat till cooked and bright green. Sprinkle with salt.
  4. Layer 1/4 cup quinoa, 1/4 cup Canadian Bacon or Bacon, 1 cup kale / broccoli mix, 2 eggs scrambled or poached.
  5. Store in mason jar. Heat up when ready and serve with avocado.
