Egg Veggie Quinoa Breakfast Mason Jar
1 Red, 1 Yellow, 1/2 Blue, 1 Green
1 cup Canadian bacon or bacon
1 cup quinoa, cooked
4 cups or 1 package Kale or broccoli slaw mix
1 tsp olive oil
1 tsp salt
- Scramble eggs (or can also poach or fry) 2 eggs per serving.
- Cook or heat Canadian bacon or bacon
- Sauté kale or broccoli slaw mix in olive oil over medium high heat till cooked and bright green. Sprinkle with salt.
- Layer 1/4 cup quinoa, 1/4 cup Canadian Bacon or Bacon, 1 cup kale / broccoli mix, 2 eggs scrambled or poached.
- Store in mason jar. Heat up when ready and serve with avocado.
