Huevos Rancheros Breakfast Mason Jar

Huevos Rancheros Breakfast Mason Jar

1 Red,  1/2 Purple, 1 Yellow, 1/2 Blue, 1/2 Green
Serves 6

Ingredients:

12 Eggs
2 cups shredded or chopped, cooked chicken
1 cup quinoa, cooked
1 can black beans, rinsed
6 tsp Cotija Cheese
1 recipe Enchilada Sauce – See sauces
6 Tbsp cilantro, chopped
2 cups or 1 package Kale or broccoli slaw mix
1 tsp olive oil
1 tsp salt
3 avocados

 

Directions:

  1. Scramble eggs (or can also poach or fry) 2 eggs per serving.
  2. Make Enchilada Sauce
  3. Saute kale or broccoli slaw mix in olive oil over medium high heat till cooked and bright green. Sprinkle with salt.
  4. Layer 1/4 cup quinoa, 1/2 cup chicken, 2 tbsp black beans, 1/2 cup kale / broccoli mix, 1/2 cup egg, 2-3 Tbsp enchilada sauce, 1 tsp cotija, and 1 Tbsp cilantro.
  5. Store in mason jar. Heat up when ready and serve with avocado.
