Mango Lime Dressing Steak Salad

For Salad:

16 oz. raw beef flank steak
1 tsp. ground smoked paprika
1 tsp. ground cumin
1 tsp. sea salt
1 tsp. olive oil
4 cups raw kale, chopped
2 cups cherry tomatos, halved
2 cups jicama, chopped
1 medium, avocado chopped
2 cups mango, chopped
4 Tbsp. raw pecans, chopped
6 Tbsp. Mango- Lime Dressing

For Dressing:

1 large Mango, peeled, pitted, and chopped
1⁄4 cup fresh lime juice, about 3 limes
1⁄4 cup fresh orange juice, about 1 small orange
1 1⁄2 tsp. lime zest or finely chopped lime peel
1 Tbsp. Raw honey
1⁄2 tsp. ground cumin
1⁄2 tsp. sea salt
1⁄2 tsp. ground black pepper
1⁄3 cup extra virgin olive oil

Instructions for Dressing:

  1. Place mango, lime juice, orange juice, lime peel, honey, cumin, salt, and pepper in a blender (or food processor); cover. Blend until smooth.
  2. Slowly add oil, blending continuously until well blended.

Instructions for Salad:

  1. Season both sides of steak with paprika, cumin, and salt.
  2. Grill steak till desired doneness. Remove from heat; let rest for 5 minutes. Thinly slice across grain. Set aside.
  3. Layer dressing, jicama, steak, tomatoes, mango, kale in a mason jar.
  4. Put pecans in a baggie to be added when ready to eat.
